A few months before my last pregnancy, I told my husband, Jarred, that I wanted to return to a keto-based way of eating. My goal was to prepare my body for pregnancy, stay healthy, and manage my risk of gestational diabetes. I had followed keto before, but this time, I fully embraced it as a lifestyle. Now, we rarely eat more than 40g of carbs per day, though our kids do enjoy a bit more flexibility.

This low-carb no-bean chili is one of our go-to meals. We make it at least once a week—sometimes even more! It’s filling, comforting, and packed with nutritious, real-food ingredients. Plus, it’s easy to customize based on what you have on hand.

Ingredients
- 1lb ground beef
- 1lb ground pork chorizo
- 1 sliced onion
- 1 sliced red bell pepper
- 1 sliced yellow bell pepper
- 1 sliced orange bell pepper
- Avocado oil or extra virgin olive oil
- 2-3 spoon scoops minced garlic
- Your favorite chili seasoning (they have chili seasoning packets at the store, Kinders is our favorite!)
- 12 oz can tomato paste

Prep your onions and peppers (you could also buy a frozen bag of the Tri peppers and onions to save time).

Heat a large pot with oil on medium to high heat, once heated add your minced garlic and let it cook for about 1-2 minutes into the oil stirring a few times to make sure it doesn’t burn.

Add your peppers and onions and stir well to coat with the oil and garlic, cover and cook for 3-minute increments until they are tender to your liking.

Add in your ground beef and chorizo breaking up the meat and mixing well with the peppers. Cover and cook in 3-minute increments until the meat is fully cooked.

Add in your seasonings and your tomato paste and stir it well until fully combined.

Cover and reduce the heat to a simmer and set timer for 30 minutes, stirring occasionally. This helps the flavors to really meld together.
